Food from Puerto Rico

Alcapurria's are typically beef filled, fried fritters made from taro root and green bananas, although the ground beef can be substituted with ground chicken, turkey or pork. Often times to change the flavor of Alcapurrias different meats are added. To prepare, the green bananas and taro root, also known as yautia, are chilled and salted. Filling and meat is added to the Alcapurrias, and then they are fried for several minutes. Alcapurrias are sold allover the Island of Puerto Rico from street vendors and various restaurants.
